CRETAN EXTRA VIRGIN OLIVE OIL (LESS THAN 0.8% ACIDITY) IS PRIMARLIY MADE FROM THE KORONEIKI OLIVE VARIETY, WHICH IS THE HIGHEST QUALITY FOR OIL PRODUCTION. A MIINIMUM TEMPERATURE IS USED DURING THE EXTRACITON PROCESS (COLD PRESSEING) TO RETAIN FULL FLAVOR. THE OIL FROM THE KORONEIKI VARIETY IS HIGH IN POLYPHENOLS, WHICH ARE POWERFUL ANTIOXIDANTS.
