The Garakis Mandilari is a product of meticulous winemaking designed to “tame” the natural intensity of the variety. The fermentation is carried out in a unique combination of acacia wood, oak barrels, and stainless steel tanks. Following this, the wine remains in contact with its fine lees for six months, undergoing regular batonnage (stirring). This careful process adds a creamy texture and structural depth while preserving the grape’s vibrant identity.
