This is an old, legendary hand-made pasta type which is indigenous only to Crete. It is a mixture of cracked hard wheat and intentionally soured sheep’s milk or buttermilk, dried in the sun. It is used cooking in soups or with meats, vegetables or snails.

Maggiri Traditional 400g “Maggiri”

Hand-made, all natural whole wheat squares of traditional Cretan pasta. In days gone by, this was served by boiling some of the pasta and frying some of it in olive oil, then mixing the two and topping it with grated Anthotiro cheese.
