Produced by the dedicated Garakis Winery in the picturesque village of Kounavoi, Heraklion, this wine is a testament to the family&#8217;s commitment to organic farming and the preservation of indigenous Cretan heritage.<br />
This terroir-driven Vidiano is sourced from four small, organically cultivated vineyard parcels. These vines are planted in poor, calcareous (limestone) soils, which provide the wine with remarkable energy and a distinctive vertical structure.<br />
The winemaking process involves a classic white vinification at controlled temperatures. To gain complexity and volume, the wine remains in contact with its fine lees for three months, undergoing weekly battonage (stirring).</p>
